Home made fish cake for busy people

Cauliflower. Ok I don't have a problem to feed my children with vegetables. But when come to cauliflower only my husband and I will finish eat. So this is one of those meal that you don't tell you children there is cauliflower inside

Home made fish cake for busy people

300gram flesh Cencaru (hardtail scad) you can use any kind of fish
200 gram of cauliflower (about half)
2 carrots
2 table spoon of all purpose flour
1 egg
1 teaspoon of salt
1/2 teaspoon of black pepper
Oil for fry

1. Clean fish and discard the bone and make sure pat dry. Combine the fish flesh and cauliflower in food processor. 
2. Grate the carrots, combine with fish and cauliflower mix, floor, egg, salt and pepper. 
3. Pick up a small amount with your hand and make a ball shape then flatten it. 
4. Fry in the pan until turn brown. I used little oil, health concern. 

Good snacks for my kids. They love to dip in the tomato sauce or I love with with Lingam chili sauce. 
I usually make this in advance. I used the baking sheet so they won't stick to each other. It will last a month in a freezer.

Dairy Free Oats and Nutty Apple Crumble

Dairy-Free Flour-less (Oats & Nuts)Apple Crumble
When you have a member of your family who is on dairy free diet, you got to change the whole way of preparing your meal. How to improvise dairy ingredient to non-dairy but at the same thing you still want to have the dairy taste buds in it. So I came out with this.

This recipe is best eat warm with vanilla ice-cream, but of course you don't serve to someone who is on dairy free diet with vanilla ice-cream.

Dairy Free Oats and Nutty Apple Crumble
For the filling
5-6 medium Apples
4 tablespoon Demerara sugar (Course Brown Sugar)

For the topping
6 tablespoon Oats
250 gram of nuts ( I used combination of Almond and Cashew)
2 tablespoon of Demerara Sugar
100 gram margarine/butter

1. Preheat Oven 180 degree Celsius.
2. Core and peel the apple. Slice into 8-10 pieces for each of apple, then mix with Demerara sugar. Arrange on the casserole dish/baking tray.
3. Mix oats,nuts and sugar, then put a side. Cube the margarine/butter for about half centimeter(doesn't have to be precise) and rub on mix (I used hand). Then pour to cover on the apple.
4 Bake for 30 to 40 minutes or until cook.

Orange Poppy Seed Muffin




There is a time when I feel tempted to grab the ready mix box from the shelves in Cold Storage. But, I had to stop it, because I always think this is what I am going to feed my family.

However, because my daughter is dairy-allergic, when making the glaze instead of using 1 tablespoon melted butter. I used 1 table spoon of melted Olive spread. It is dairy free spread.

Why did I start this blog?

I started cooking since I was teenager. My siblings and I used to watch our mother cooking and today, all of us are quite excellent in cooking. I grew up in Malay culture, went to school in Japan, worked for American company and now married to English. So pretty much what I make at home are everything, from Malay, Western, Indian, Thai, Chinese, Japanese and everything else :-)

Why did I start this blog? I live in busy and demanding life. My husband is frequent traveller, so I want to share how to make quick and cheap meal. My son is picky-eater. He won't try anything new unless we force him to. And last, this is the most important reason. My daughter is on dairy-free diet. So it is simply the complexity that made me want to share. I hope this will benefit anybody who is reading my blog.
